Reflections on the Mountain

A few of my family members and I made it up to Schweitzer this past week, and wow—it snowed almost all day! We had 3 or more inches overnight, and it made for such a fun final ski day of the season.

This was my 16th time skiing this year—which is huge for me! My original goal was 10 days, then I bumped it to 15… and I’m beyond grateful I got to sneak in one more. Last year, I only got up 7 times (and the snow wasn’t nearly as good).

It felt so good to move, play, and be out in the mountains this season! Skiing has been such a fun way to stay active, play with family and friends, enjoy being outdoors, and also to push myself to improve and conquer some fears. I’ve truly been thankful for the winter season we’ve had and am now finally ready to jump into some spring activities! One of my favorites is hiking!

We eat a lot of chicken in our family and like to try new recipes so we’re not always cooking the same things each week…that gets boring! We do really enjoy Thai food. This recipe looks amazing and I’m planning on trying it out this week! If you decide to give it a try, let me know your thoughts too! You can eat it over rice, noodles, cauliflower rice, potatoes, etc.
